State Comp Prelims & BIG BEER BREWING!!!

Good Afternoon Ladies & Gentlemen,
 
Saturday morning, Izzy & I headed over to Faction Brewing to help out with the California State Homebrew Competition preliminaries, as hopefully the SF Homebrewers’ Guild will be taking over a major part of that in the years to come. It was a great learning experience to see how homebrew competitions happen behind the scenes, network with BJCP certified judges and experience homebrewers alike, and even gave us some insight into future entries. There were a bunch of great guys (and a few ladies) and it was a pretty damn interesting time. We also happened to help with one of the more interesting categories, Specialty Beers… which from what I can tell is basically the category for all beers that don’t really match with the BJCP guidelines 30+ other beer types. These are where you get a bunch of hybrid beers like “bourbon barreled aged vanilla porter with pumpkin pie spices, lemongrass, curry & caraway seeds” where obviously some of them really just have to many things going on… and can suffer from what I like to call Dr. Pepper Syndrome, where you have so many flavors going on, that you really only get one flavor from it. However, there were a lot of interesting examples submitted and while some weren’t particularly good to my particular unrefined palette, others were pretty interesting & well-made. Again, the whole process was very interesting… but perhaps I should get a little training in the field before I start waxing poetic about it to you. I’d hate to misinform you and have this all just be my opinion… though obviously I’d throw it in from time to time.
 

After helping out, we grabbed some BBQ@Lux food truck’s Sticky Icky Garlic Ribs (delicious) and decided to try some of Faction Brewing’s selections… ranging from their sampler with their staples like Pilsner, IPA, Belgian, etc. and even their Bourbon Barrel Imperial Porter & award-winning Purdy Porter which actually won 3rd place for a Robust Porter at the Great American Beer Festival these past few weeks (and we actually tried at Elevation 66 last week) and it’s pretty fantastic. I highly recommend checking them out if you’re ever in the Alameda area… and their location has a beautiful view of San Francisco… and the airfield that fans of “Mythbusters” may recognize…
 














Sunday morning, we brewed our first attempt at a REALLY BIG beer… our first Imperial Stout that we’ve basically already dubbed $teve’s Birthday Cake since because of the extremely high sugar content and the rate that it’ll convert those sugars to alcohol, it won’t be fully ready for about 5-6 months, which puts it right around my birthday… but then it should also be around 11-12% ABV. Okay, so what makes this beer a little different? Well, with the vast majority of our brews thus far, the time involved in turning them from brewpot to ready to drink is about 4-6 weeks. That’s because the amount of sugars & yeast involved can convert enough in that time to produce a beer with about 4-6% ABV. We’ve had a few like the Winter Warmer & Bourbon Barrel Porter that took slightly longer because they had more sugars to convert into alcohol in order to produce about 7-8%. The problem is that for most yeasts, once they reach that high of alcohol content in the wort/beer, they start to die off because it’s too high of a level for them to survive… or it just takes them a lot longer to convert because there’s not as much sugar for them to eat. You may be asking right now, “$teve, exactly how much sugar are we talking about in order to get this kind of alcohol content? Are you making moonshine or something?” Well, for a five gallon batch that we’re making… it’s roughly 13 pounds of pure sugar total, in the form of dark dry malt extract, pure cane sugar, molasses and what is pulled from a few pounds of specialty grains. That works out to roughly a quarter-pound (120 grams) of sugars in every twelve-ounce bottle… that has been converted into alcohol. Mountain Dew & other sodas have about 45 grams in the same amount… but these are just different sugars & have been converted. Just something to think about…
 









Also, because of the high levels of sugars, you’ll need a lot more yeast than normal & constant aeration the first few weeks to start the conversion process as best you can, so that you can avoid problems with the yeast going stagnant and having to repitch halfway through... similar to our mead that we started last year, which by the way, we should see if it's better now. Less than 24 hours after throwing in the yeast, here's how active it has been already... luckily we started with the blowoff tube this time...


 
That being said, with the extra ingredients, monitoring for the first few weeks, longer fermentation times & everything else involved with these BIG Beers, they can REALLY be worth it when it comes to flavor. You can probably find some great examples of these kinds of beers at your local brewery… but some of my favorites are North Coast’s Old Rasputin, Heretic’s Imp & Fifty Fifty’s selection of big beer releases.

STEVE-TOBERFEST COMETH

Good Afternoon Ladies & Gentlemen,
 
Friday at work, some of my awesome coworkers’ put up some birthday decorations in my office… and you can probably sense the theme from the pictures below. They had Nat King Cole playing when I got there (because Jay-Z was too risqué for a work environment, but they know how a thug do), decorated my office in Craft Brew decorations, a bag’s worth of Reese’s PB Cups… and later in the afternoon, they made a German Chocolate Cake & Chocolate Stout Cupcakes. Five stars!!!
 





Saturday was the long anticipated STEVE-TOBERFEST!!! and it did not disappoint. My lovely ladyfriend Izzy made some great beer-marinated polish sausages to fry up with sauerkraut & all the usual condiments… as well as spaetzle (egg noodles) with a creamy sauce… and some dumplings with gravy… and triple fudge brownies… and there was also some great desserts & side dishes brought by guests… and of course, possibly the star of the show (besides me)… BIER!!! We also had a lot of great decorations set up… behold!!!
 







 

There were about a dozen visitors including J-Mo, Jackie D, Izzy’s Aunts & cousin, but just a great time of catching up & enjoying a few beers and great food. We didn’t even have to bust out the party games or movies… just good ol’ fashioned conversation & antics. I did get a few excellent gifts as well including an extra carboy & some hops from Clarissa & Andrew… a bacon floor mat from the Aunts… some clothes from Jackie D… and Izzy not only got me a book I’m excited to read (Nick Offerman’s “Paddle Your Own Canoe”) and a few cute knick-knacks… but she also bought me a portable basketball hoop. Though I’m not quite sure how it’ll work in our cul de sac, the thought is incredibly sweet & she’s the best gal a guy like me could ever hope to find. Thank you sweetie!!! Great party!!!
 
Sunday night, I went to Southern Pacific Brewing in the Mission to take part in a special Yeast Tasting with the SF Homebrewers Guild. The basis of the tasting was that they took the same base wort (Kolsch grain bill recipe) and separated into ten separate fermenters using a different yeast in each. By doing this, it’s a great way to show how the yeast can make some major differences in the flavors & characteristics produced in the beer, despite being almost nominal amounts when in the grand scheme of things (about an ounce for every five gallons of wort typically). I got there a little early & had a drink at the bar with the Vice President of the Guild… and basically just shot the sh*t until they were ready for us… and the tasting was VERY interesting. I recommend something like this for every craft beer enthusiast. You’ll learn a lot & it’s interesting what you’ll find out. We sampled just about everything from a standard ale yeast to hefeweizens to Belgian dark to saison… and each had their own distinct characteristics… even by my unrefined pallet. Also, may have to take Izzy out there another time to test their beer. I’ve only tried the tasting and their porter while there this time. Big thanks to Ian for putting this all together.

Jackie D's Search for Habitation

Good Afternoon Ladies & Gentlemen,
 
It has been a little bit of a busy week… but you know that’s how G’s do it. During the week, I went apartment hunting with Jackie D to help her try to do the impossible… which is find a reasonably sized one-bedroom apartment in San Francisco for under $3,000 a month… preferably under $2,000 but let’s not get too crazy. This IS San Francisco that we’re talking about. The city were the average selling price of a home went up over 30% this year when the national average was 1.4%. F**king insane… For what I pay as my share with three roommates in a townhouse… The Wingman pays less than HALF for a six-bedroom on acreage in Utah.
 
Anyway, we checked out a few places… and they were mostly in the Tenderloin the first few days… and they were pretty ridiculous. About 400 square feet studios… for about $1,800+ a month… and not exactly the finest amenities… and crackheads abound on every single block in that area. We were still optimistic with the search… but yeah, she was definitely looking into the roommate thing for a moment... and then on Friday, she luckily found a place that was half-decent... and "only" $2,300 a month... so yeah, she jumped all over that a few hours before she flew back to Philly. YAY!!! I'm excited for her... and I think she is too... but she's also running numbers in her head... I can tell. So excited for her return!
 
As for my apartment, the bathroom is still being redone… in fact, now COMPLETELY redone like even under the floorboards and everything since they found a bigger leak problem… so I should have it back by the end of next week. Fingers crossed… and in the meantime, all of my stuff is now in about a third of the space since the workers need to be able to walk entirely through my bedroom to access the bathroom… but yeah, it should be even better when they’re done. Allegedly they’re going to jack up the shower head to suit my six-foot-eight frame… but we’ll see if they even raise it to accommodate your average six-footer. Before it was… I don’t know… Asian influence? So yeah, fingers crossed.
 
Saturday, Izzy & I had some homebrewing duties to tend to… starting with the transfer of our future aware-winning Honey Amber Ale to the secondary fermenter…

Then, since we had an open primary carboy, why not fill it up with our next batch - Blood Orange Hefeweizen!!! Based on a recipe from Dogfish Head Brewery’s owner in a Popular Mechanics article, it sounded pretty interesting… and since we were able to pick up some blood oranges in Watsonville last weekend, and the rest of the ingredients at homebrew shops, so decided to give it a try. The recipe is obviously pretty similar to our first batch of Bavarian Hefeweizen that we made in November… but with the addition of blood oranges into the wort & fermentation for a different colors & taste components… as well as about double the hops of our Bavarian Hefeweizen.
 
However, due to a few factors, we were simply NOT feeling it... and it wasn't essential... so we decided to not make the new batch & then we spent the weekend dogsitting for Izzy's aunts because... well, they have a teenage daughter who could do it but... she was busy... by being there 90% of the time... except when she went to Target... allegedly... let's face it, she's a teenage daughter who just doesn't want to do anything. Good for her. Regardless, we had fun anyway. We did squeeze the blood oranges from last week & got some zest... so it'll be well preserved for next week's batch to be brewed.
 

Now we will soon have the Oktoberfest Lager, Honey Amber Ale AND Blood Orange Hefeweizen doing their thing… and they should all be ready in time for our next big party. What is the party you ask? Why… it’s $TEVE-TOBERFEST!!! What is that? Well, it’s going to be my 33rd birthday celebration… complete with ample beverages (like the 15 gallons of previously mentioned beer that I currently have fermenting& about 20 more gallons in other kinds of booze ready for drinking), some oompah music, Falco, and Izzy & I are going to try to make some amazing German foods like pretzels, spaetzle, some legit brauts and all that kind of stuff too. There will also be the triumphant return of… DAS BOOOOOOOOT!!! Details will be coming soon… but prepare thy selves for Epicness!
